If you've strolled through a Texas grocery store recently, you’ve probably gasped at the price of eggs—and maybe even debated whether you really need them for your morning omelet. Or in some cases, maybe you haven’t even been able to find eggs at your local grocery shop!

Just the other day, my family and I fell down a rabbit hole of nostalgia during a conversation about groceries and we started reminiscing about the good ol’ days when eggs were barely over a buck a dozen.

Now? A dozen can cost as much as $6!! To some it may not sound like a huge difference, but if you’re like me and you have a growing boy who eats more than 5 eggs for breakfast, then $6 for a dozen of eggs is A LOT!!

So, what’s the deal with the egg-pocalypse? 

Turns out, it's a scramble (pun intended) of factors. Texas, like the rest of the country, has been hit by rising feed costs, labor shortages, and—you guessed it—inflation. Plus, a major avian flu outbreak wiped out millions of hens last year, creating a supply crunch that sent prices soaring.

And don’t even get me started on the fancy free-range, organic eggs. At this rate, buying those feels like taking out a second mortgage so I had to break the news to my son that Great Value eggs would be taking over our fridge for a while! 

So, what’s the solution to this egg-pocalypse? 

Sadly, unless we’re raising chickens in the backyard, we’re stuck shelling out the big bucks. Until prices drop (if they ever do), i guess we’ll have to appreciate $6 eggs and hope they don't increase even more!
