It's so serious that to this day I still get either praise or backlash for bringing up the "right kind of tortilla for a taco" debate. Just to be clear, it's a corn tortilla- but I digress because today I'm here to talk to you about something that I've discovered is somewhat of a South Texas specialty: sandwichon!

What is Sandwichon?

A sandwichon is also known as a sandwich cake, which I have to say I like those two words separately, but I'm not entirely sure how I feel about them together! This is how this website defines sandwichon:

Sandwichon are savory sandwich cakes made of layers of crustless white bread and filled with different fillings, such as ham filling, tuna salad, chicken salad, and this shrimp paste. After it is assembled, it is covered with butter or cream cheese frosting and decorated with herbs and vegetables.

 

It sounds a bit weird, but not wanting to judge I decided to check it out and found this video by Liz Martinez on TikTok and how she makes sandwichon. Check it out.

As a born and bred Texan I have never heard of this! I'm not going to lie, though, she had me in the first half!

 

Aside from the fact that I'm not a big mayonnaise fan, I do like chicken salad and I like that mixture of mayo and ham- it started out good with the assembling of layers, but that "frosting"? I don't know how I feel about that!

Looking through the comments someone said:

The topping should not be sweet, it should be mayo, cream cheese and jalapeno.

Which certainly sounds delicious, so I decided to do some more research and found this recipe.

This one doesn't include the chicken salad, but I'm sure that's optional. But the "frosting" of the cake looks like it goes better with the sandwichon! This one is one that I'm sure I'd be more inclined to try!
