Beloved Las Cruces Festival Makes Long-Awaited Return

I love a good plate of enchiladas, and growing up in the Borderland, I thought I knew exactly what one should look like.

Then I ordered enchiladas in New Mexico.

If you've never crossed the state line and ordered a plate in Las Cruces, prepare yourself, because New Mexico does enchiladas a little differently. They’re different from the enchiladas many of us grew up eating in El Paso, but they’re every bit as comforting, flavorful and worth the drive.

Now, one of the celebrations built around that New Mexico tradition is finally making its return.

The Whole Enchilada Fiesta is Returning to Las Cruces

After more than a decade, the Whole Enchilada Fiesta is officially returning in October 2027.

The festival was once one of southern New Mexico's signature celebrations, drawing thousands of visitors for live music, local vendors, family activities and, of course, plenty of enchiladas.

City leaders announced this week that New Mexico State University will partner in bringing the festival back, with hopes of reviving a tradition that many Borderland families have missed since it last took place in 2014.

For longtime Las Cruces residents, it's the return of a hometown favorite. For El Pasoans, it's the perfect excuse for a weekend road trip!

Why New Mexico Enchiladas Are Different From El Paso’s

As much as I love the Mexican food we have here in El Paso- and trust me, we're spoiled with incredible options- New Mexico has its own take on enchiladas that's worth experiencing.

Traditional New Mexico enchiladas are usually stacked instead of rolled, layered with corn tortillas and covered in authentic red or green chile sauce. They're often filled with cheese, chicken or ground beef, and many are served with a fried egg on top.

It's comforting, messy, packed with flavor and unmistakably New Mexican.

And if you've never been asked, "Red or green?" just know there's only one acceptable answer if you can't decide: Christmas.

Las Cruces is Already Home to An Enchilada Record

If there's one city that knows enchiladas, it's Las Cruces.

The city is home to the Guinness World Record for the world's largest enchilada, a massive creation that stretched more than 120 feet and weighed over 4,700 pounds. It was a fitting claim to fame for a city that has celebrated its enchilada heritage for decades and was closely associated with longtime fiesta organizer Roberto Estrada, whose passion helped make the event a New Mexico tradition.

The return of the Whole Enchilada Fiesta isn't just about bringing back another festival. It's about reviving a tradition that's been part of southern New Mexico's identity for generations.

And if it also gives me another excuse to make the drive to Las Cruces for a plate of stacked green chile enchiladas, sign me up!
