Science has tackled one of the most pressing questions that has baffled mankind for years: What are the best types of cheese to use in a grilled cheese sandwich?

The American Chemical Society analyzed the properties that make cheese melt in an ideal, gooey way including the breakdown of its proteins and its levels of lactic acid to determine the best cheeses, and after quite a bit of experimenting, concluded that the top three cheeses for a grilled cheese sandwich are Gouda, Gruyere, and Manchego.

Now, I know what you're thinking: How about some cheeses I actually have in the fridge, Mike. In that case, your best bet is a mild cheddar. It won't melt quite as well as those fancy cheeses, but it's better than most of the other options.
