With these cold nights, what sounds better than a nice pipping hot delicious bowl of homemade chicken soup?! Here is what I threw together for dinner last night during Snowpacalypse 2013...

Simple fresh ingredients and a big pot is all you'll need! Oh....and a stove!

One package of boneless chicken breast

2 cups coin diced carrots

2 cups dices celery

1/4 chopped onion

4 cups (sliced about a quarter sized) potatoes

a handful of fresh cilantro

1 clove of garlic

salt, pepper, granulated onion to taste

Directions: Place the chicken (frozen or thawed) into a large pot and fill with water almost to the top. Set on high heat to bring to a boil. Let cook about 20 minutes and add in the garlic, onion and cilantro ad spices to taste. Taste the broth to guage.flavor. Allow to simmer about 10 minutes and add in the potatoes. Again allow to simmer for 15 minutes and add in the rest of the chopped veggies. Let simmer while occasionally stirring about 20 minutes and yummy you have some awesome cold weather home cooked food! Enjoy!
