We're all trying to eat a little healthier these days, but sometimes it seems like nothing healthy is yummy. These super easy zucchini pancakes can take the place of bread or a tortilla, and become a part of your dinner repertoire.

After you've made the pancakes, jazz them with these delicious fillings:

1. For brunch - Fill with cheesy scrambled eggs and a dash of hot sauce.
2. To go alongside drinks - Make the pancakes bite sized and dollop with a bit of sour cream or creme fraiche, and then top with a sliver of smoked salmon.
3. For dinner - Fill with grilled shrimp or chicken, some finely shredded raw cabbage, cilantro, and pico de gallo.

Add my fave summer drink, Watermelon Smushies, and you have a fab meal. To make Watermelon Smushies, cut up watermelon and put in the freezer in a zipper baggie for an hour or so. Put the frozen watermelon in a blender with a splash of your favorite liquor - I use vodka or rum - blend until smooth and icy, and enjoy!
