Are you stuck in a rut for February?The end of winter into spring can put you in a funk. The shorter days spent inside can eventually wear on your spirit and make you tired.

Take your kids to a scenic drive or to the library or find indoor fun. Go to an indoor play gym or rock wall and let your family climb, run, jump and play into some of that hidden energy. Or stir up the pot right at home. When was the last time you popped a big bowl of popcorn and sat down as a family in front of a movie or for game night?

Make a Case for Taco Night

Kids welcome any excuse for taco night. What kid wouldn't? So parents, put on your taco hat, hang the piñata...or simply put out an easy taco bar. And if you do, don't forget to top it off with my Uncle Pancho's famous guacamole. This alone makes a great case for having tacos tonight.

I’ve learned how to make excellent guacamole from living in El Paso. The measurements are only a guide, since you can customize this to your taste. I seldom make this with less than 6 avocados, just because it's that good, and who knows...might want to get a spoon and just finish it off. Don't mess it up by putting all sorts of stuff in it. Less is better with this recipe. Just let the avocados be the star.

  • ~ 3 avocados, ripe, mashed somewhat
  • ~ 1/4 - 1/2 cup pico de gallo or chunky salsa
  • ~ One bunch cilantro, chopped
  • ~ 1 T. lime juice
  • ~ 1/4 onion, chopped
  • ~ 1 clove Garlic, minced
  • ~ salt and pepper to taste

Directions:

  • ~ Mix together.
  • ~ Put in bowl.
  • ~ Place on table and stand back!
